Vegetarian Pulled "Pork"

Sometimes I get a major craving for barbeque pulled pork but do not have pork and don't want to wait for 2-3 hours while it cooks! During these times, I cook a pulled "pork" made from jackfruit and it totally satisfies my barbeque craving! This recipe can also be made vegan if you substitute mayo for vegan mayo in the coleslaw.


Ingredients

BBQ Jackfruit

  • 1 yellow or sweet onion

  • 28 oz jackfruit (2 cans)

  • 1 cup barbeque sauce (homemade or BBQ sauce of choice!)

  • 1/2 cup water

  • salt and pepper

Coleslaw

  • 12 oz coleslaw mix (or shred your own carrots, purple cabbage, and cabbage)

  • 1/4 cup of mayo (or substitute vegan mayo)

  • 2 tsp apple cider vinegar

  • 2 tsp dijon mustard

  • salt and pepper


Instructions

BBQ Jackfruit

  1. Dice the onion

  2. Cook onions in a frying pan on medium heat with a drizzle of olive oil until the onions are softened and translucent

  3. Rinse and drain the jackfruit and cut off the hard core

  4. Add in the jackfruit, barbeque sauce, water, salt and pepper to the onions and let it simmer for 20 minutes

  5. Using a potato masher, mash the jackfruit until it has a pulled pork appearance

Coleslaw

  1. Place the coleslaw mix (or shredded cabbage and carrots) into a medium sized mixing bowl

  2. Add the mayo, apple cider vinegar, mustard, salt and pepper to the bowl and combine

BBQ Jackfruit Sandwich

  1. Toast your bread (I used brioche buns, buttered and toasted it!)

  2. Add the jackfruit on the bottom

  3. Top with the coleslaw
