A Few Notes About the Recipe
If you are making a larger number of sandwiches:
Put your bacon in the oven!
I set my oven at 400 degrees Fahrenheit for 20-25 minutes
and cooked the bacon on a baking sheet with a drying rack under the bacon. This
will ensure the bacon is cooked evenly and requires less hands-on work. The drying
rack helps separate the bacon from the grease.
Another note: the thicker the bacon, the longer it will take to bake! I found that the
Kayem double smoked thick cut bacon took around 25 minutes to get crispy on the
outside and just cooked enough on the inside.
Cook the eggs when the bacon is almost done.
Eggs get cold pretty fast, so begin cooking the eggs when the bacon has ~5 minutes
left to bake.

Description
This filling and delicious bagel sandwich is just what you need on those slow mornings! The crunch of the bagel, saltiness of the Kayem's Double Smoked Bacon, and the runniness of the egg will never let you down.
Ingredients (per sandwich)
1 bagel of your choice
2 pieces of Kayem's Double Smoked Bacon
1/2 avocado (sliced)
1 egg
1/2 medium tomato
1/3 cup sprouts
1/4 cup mozzarella
Instructions
Pre-heat oven to 400 degrees F or heat up pan for bacon
Slice tomatoes and avocado
Place bacon in oven (20-25 minutes) or pan and begin baking until desired crispiness
Slice and toast bagel
Place egg in a frying pan with olive oil or butter and cook as desired (I personally like sunny side up or over easy, maybe even poached if I'm feeling ambitious!)
Assemble the sandwich and enjoy!
