This is one of my favorite dishes to get at a sushi restaurant that is pretty easy to make at home! The crunch from the rice perfectly complements the smooth texture of the spicy salmon. The video of this recipe actually went viral on my TikTok @bostonfoodgram!
Ingredients
1 cup of sushi rice (dry)
1/4 lb of sushi-grade salmon
1 tbsp spicy mayo
1 jalapeño
soy sauce
Instructions
Cook the sushi rice according to the directions on the rice bag
Press the cooked sushi rice into a rectangular tray
Refrigerate the sushi rice until cooled (this helps keep the rice together in when pan-frying it)
Turn the stove on high and heat olive oil in a non-stick frying pan
Cut the cooled sushi rice into rectangles
Fry the sushi rice on both sides until light brown and crispy
In a bowl, cut the sushi-grade salmon into small pieces
Mix spicy mayo into the salmon
Place spicy salmon on top of the fried sushi rice and top with a thin slice of jalapeño

Spicy Mayo - You can purchase spicy mayo or mix 1 cup regular mayo with 1 tbsp siracha
Sushi-Grade Salmon - I purchase mine from Mercato.com from North End Fish Market. Search their website for a sushi-grade fish seller near you!
